Vitamin A plays a key role in maintaining vision, immune function, and skin health. However, excessive intake can lead to hypervitaminosis A, a condition with symptoms including nausea, dizziness, headaches, and, in severe cases, liver damage and bone fractures. Long-term overuse of vitamin A supplements may also result in teratogenic effects, which are especially dangerous for pregnant women as they pose risks to fetal development, potentially causing birth defects. Recommended dietary allowances (RDAs) of vitamin A are around 700–900 micrograms per day for adults, and exceeding this regularly through supplements can increase toxicity risks.

Vitamin D is essential for bone health and immune support, facilitating calcium absorption. However, too much vitamin D can cause hypercalcemia, a condition of elevated calcium levels in the blood, leading to nausea, vomiting, muscle weakness, and even kidney damage and calcification of soft tissues. Recent studies suggest that vitamin D toxicity often results from over-supplementation, as natural food sources and sunlight rarely provide excessive amounts. For adults, an intake of 600–800 IU per day is generally recommended, while toxicity risks increase with intakes exceeding 4,000 IU daily.

Vitamin E functions as a potent antioxidant, protecting cells from oxidative damage. However, overconsumption of vitamin E can interfere with blood clotting mechanisms, increasing the risk of hemorrhage. Studies have linked high doses of vitamin E supplements to an increased risk of stroke, specifically hemorrhagic stroke, as well as other cardiovascular complications. The RDA for vitamin E is 15 milligrams per day for adults, and exceeding this significantly through supplementation raises health risks.

Vitamin K is important for blood clotting and bone metabolism. Although vitamin K toxicity is rare, it can interfere with anticoagulant medications like warfarin, decreasing their effectiveness and potentially leading to clotting issues. The RDA for vitamin K varies between 90–120 micrograms per day, with caution advised for individuals on blood-thinning medications.

Understanding Food Adulteration: Health Risks, Economic Impact, and the Need for Stricter Regulations

The 1938 Food, Drug, and Cosmetic Act mandates that food must not contain any added poisonous or harmful substances that could render it injurious to health unless such substances are necessary or unavoidable under good manufacturing practices, and a safe level has been established. Foods failing to meet these standards are considered adulterated. Additionally, food is deemed adulterated when inferior, harmful, or cheap substances are added.

An adulterant is any substance that degrades or lowers the quality of food. Adulterants are typically much cheaper than the genuine food items they replace, providing dishonest traders with significant ill-gotten profits. Adulteration is not only about health hazards but also encompasses various forms of economic cheating. This includes the removal of expected constituents, the addition of substances to increase bulk or weight, and making the product appear better than it is. Adulteration also involves reducing the strength or quality of food, partially or completely substituting one product for another, and concealing inferior or damaged products.

The ramifications of food adulteration extend beyond health risks to include social and legal consequences, such as consumer illnesses and deaths. Economically, it affects food producers, suppliers, distributors, and retailers, as well as governments that rely on taxes from these entities. For instance, the European Union and the United States have faced substantial economic losses due to food fraud. The global food industry loses an estimated $30 to $40 billion annually due to adulteration and counterfeiting.

Recent incidents highlight the pervasive nature of food adulteration. In 2023, several countries reported widespread adulteration in dairy products, with harmful chemicals added to extend shelf life. Similarly, counterfeit olive oil and honey have flooded markets, misleading consumers and undermining genuine producers. These examples underscore the ongoing challenge of ensuring food safety and integrity in a globalized market.
